Teodora Cirspin Zevallos has been growing coffee for 11 years and joined a specialty coffee development programme 3 years ago, promoted by the local government. She took a risk growing the Gesha, Typica and Yellow Caturra varieties under the protocols of specialty coffee. The demands on time and effort would undoubtedly increase, but, in our view, the quality of this coffee shows it was well worth her efforts!
This is a delicate and sweet Peruvian coffee, again imported via our trusted partner, Balance 51. The coffee is a green blend of several varieties, including Gesha and is handled and processed with great care. The cherries are fermented for 24 hours in air-tight GrainPro bags, after which the skin and mucilage are de-pulped and the beans moved to drying beds until they achieve the desired 10.5-11% humidity. The parchment is then cooled in the shade and the coffee is packed in polypropylene bags, ready for export. Our light roasted profile makes this a delightful and accessible filter coffee, or as a lighter, fruitier espresso if that’s to your taste. It has a vibrant but gentle acidity and a lovely, honey-like sweetness.
