Strawberry, Raspberry, Cherry, Passionfruit
An original Ethiopian variety grown at one of our favorite farms in Colombia. This Wush Wush coffee, grown by Luis Anibal Calderón on the Villa Betulia farm in Acevedo, Huila, is full of sweetness.
Wush Wush is named after the Wushwush area in Ethiopia’s Kaffa region, known for its fertile highlands and rich biodiversity. The variety was introduced to Colombia about 30 years ago and has adapted well to the country’s high-altitude environments. It is a low-yielding variety and challenging to grow, but it is prized for its exceptional cup quality. Its floral, fruity and delicate character is often compared to Geisha.
Luis Anibal is considered one of the most innovative coffee farmers in Acevedo. At a time when many producers focused on volume, he deliberately chose quality over quantity. This meant lower yields at first, but his focus on high-quality varieties and experimental processing paid off. Today his farm serves as a model for other growers in the region, many of whom come to him for advice and seeds.
To bring out the sweetness of this lot, only fully ripe cherries are selected at harvest. The cherries are then placed in airtight bags for a 72-hour aerobic fermentation, after which the coffee is slowly dried for about 20 days on raised African beds. This careful drying preserves the delicate aromatics. Roasted on a short profile, it shows lots of sweet berry flavors combined with a high and lingering acidity.
