Maraschino Cherry, Strawberry, Peach, Red Currant
This microlot is 100% Wush Wush. It was grown by Luis Anibal Calderon at the Villa Betulia farm in Colombia. However, the varietal itself originates from (you guessed it) Wushwush, an area in the Sidamo region of Ethiopia, and was probably imported to Colombia around 25 years ago.
These naturally processed beans have undergone a fermentation method called carbonic maceration. The freshly picked cherries are first aerobically fermented, wherein they are submerged in water in an open-air tank, quickly breaking down over the course of around 24 hours. The whole cherries are then placed inside Grainpro bags for 50 hours, maintaining a temperature below 22ºC. CO2 is gradually added. Finally, the whole cherries are placed on raised beds at a temperature below 35ºC until the ideal moisture content is achieved. It’s a tricky processing method, but it works wonders to bring out unique and complex flavours in the coffee.
Unsurprisingly, this is another of our limited selection of coffees. This one is wonderfully sweet, with flavour notes that remind us of candied fruit. Expect a lot of outspoken sweet-fruity notes like cherry, strawberry, peach and red currant. Another amazing summer coffee to lighten up your filter coffees at home!
