An exciting new coffee for those of you who love the taste of Colombia! This microlot belongs to Jairo Arcila, who grows his caturra coffee variety on the volcanic soils of Armenia in Western Colombia. The coffee is harvested following strict ripeness criteria: floated, and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature-controlled conditions until ideal moisture content was achieved.
Arcila’s careful processing yields us with a beautifally balanced and vibrant coffee, perfectly encapsulating classic Colombian coffee flavours. Our slightly lighter medium roast profile yields a balanced coffee with diverse flavours. Expect a sweet, toffee-like body, a mild raspberry acidity and a fresh, pomelo/grapefruit bitter lingering in the aftertaste. Primarily roasted for espresso, but it exceeded our expectations when set as filter!
