This Colombian Papayo from Llanara Farms is no exception, bursting with tropical fruit flavours such as pineapple and some delightful spice notes like ginger and lemongrass.
The coffee was sourced by
Grounds Coffees, who have a strong local partnership in Colombia with Fred Bertolone of
Plurilateral Solutions. Since 2017, Fred has forged close partnerships with Colombian farmers, directly importing coffee into Europe. The cherries are picked at the peak of their ripeness and floated to sort out any defects. The beans then go through a 90-hour anaerobic fermentation in a stainless steel tank with yeast, after which they are washed with spring water and then dried for 12 days in a solar drying station. Our light roast profile brings out the best flavours in the coffee, and it’s a great cup as filter and espresso – or, when the sun comes out, a tropical fruit-tasting cold brew. Simply put, it’s the perfect summer coffee.
