El Paseo is a beautiful, family-owned farm featuring several native shade trees and situated on the slopes overlooking the valley of Buesaco. It is currently run by Huver Castillo, a third-generation coffee grower whose close relationship with coffee only developed later in life, having been a math teacher at a school in Nariño initially.
The name Rocket Flower originates from the intense floral characteristics developed through a meticulous, double fermentation process. The cherries undergo an initial 36-hour pre-fermentation in cherry. The beans are then pulped, removing the cherry and subjected to an anaerobic fermentation in stainless steel tanks with regulated relief valves. 200 liters of collected leachates are used per fermentation tank with the additions of specific enzymes to enhance the floral characteristics of the coffee. The result is an exceptionally clean cup, full of vibrant floral and spice flavour notes which we love here at Ief&Ido. Unsurprisingly, it is a great choice for filter coffee. As espresso it is a unique experience – retaining its clean, floral flavour notes but with a little more body.
