Yirgacheffe refers both to a renowned coffee-growing region in southern Ethiopia and to distinct local varieties traditionally cultivated there. These heirloom Arabica types have adapted over generations to the region’s high altitudes and fertile, volcanic soils. Coffees from Yirgacheffe are celebrated for their floral aroma, tea-like clarity, and bright citrus notes, producing cups that are delicate yet intensely expressive. Occasionally, certain coffee varieties are grown outside their country of origin, and that is exactly what this coffee is – a Yirgacheffe originating not from Ethiopia, but from renowned producer Luis Anibal Calderon at his Villa Betulia farm in Colombia. Because the variety is grown on a completely different terroir and processed in a different manner, the flavour profile changes dramatically in comparison with traditional Yirgacheffes grown in Ethiopia.
This lot is produced through a carefully controlled fermentation. After picking, the cherries are placed in bags and undergo a 72-hour aerobic fermentation (oxidation). The result is a wonderfully sweet and fruity coffee. In particular, we tasted a lot of red fruits and a sweetness which reminded us of red Haribo candy.
