Luis Anibal Calderón is considered one of the most innovative coffee farmers in the Huila region of Colombia. His passion for specialty coffee and his deep understanding of the interaction between microclimate, soil composition, and coffee varieties have earned him international recognition.
This lot is produced through a carefully controlled co-fermentation with natural cardamom. After picking, the cherries are depulped while leaving all of the mucilage intact, providing a rich substrate for fermentation. The beans then undergo a 72-hour aerobic fermentation together with natural cardamom, allowing the spice to integrate subtly into the coffee’s flavour profile.
