This unique Liberica variety originates from the Mooleh Manay estate lot in Kodagu, in southern India. This Natural coffee has been processed utilizing an experimental yeast-inoculated method. Yeast is added to the sugar-rich un-pulped coffee cherries (which act as food for the yeast) and sealed off from the outside air. The result is a coffee that has both the intensity characteristic of Indian coffees but also a diverse range of sweet and fruity flavours which are brought forward by the 84 Hour controlled fermentation. Those who enjoyed our Indian Malabar coffee should absolutely give this coffee a try!
The flavours shine brilliantly when set as a filter coffee. The long and narrow Cafec Deep-27 dripper brings out more fruity sweetness, while the more traditional dripps like V60 and Origami produce more balanced cups. As espresso, it is extremely punchy with flavours that remind us of liquorice fruit candy, otherwise known in the Netherlands as ‘Drop’.
